SHRIMP AGUACHILE

Do try at home! This delicious recipe pairs just excellent with Tostones, enjoy!

 

Ingredients:

1 lb Shrimp
10 Limes
1 cup Cilantro (loosely packed)
1 seeded Jalapeno pepper
1 seeded Serrano pepper
Ginger (about the size of a garlic clove)
1 Garlic clove
1 Cucumber seeded and sliced
1 small Red Onion thinly sliced
½ teaspoon of Salt
½ teaspoon of Pepper
Radishes (to garnish)

 

Instructions:

Peel, devein, and butterfly shrimp

Squeeze 1 cup lime juice in a bowl (about 6 limes). Add shrimp and soak in lime juice for 45 min

Remove lime juice from shrimp and put in blender. Also add the following to blender: juice from 4 additional limes, garlic, ginger, cilantro, jalapeno, serrano, and salt/pepper.

You can blend half the peppers first and taste to see if you want it spicier. If it gets too spicy add more lime juice. Blend to liquefy

Add chili-lime mixture to shrimps and let sit for 30 min

Slice red onions and place in bowl with water. This will take the bite out of them. Let this sit while you are prepping everything else (at least 10 min)

Slice cucumber and radishes

After the shrimps are through with the 30 min in the chili-lime mixture add onions and cucumbers to them. Let this sit for 20 min

Garnish with radishes and decorate with Tostones
